I can't think of any MMO except Eve Online that has the guts to just tell people how many people are logged in at any given time. The last somewhat official number from anet was "almost 300k" in an interview before the launch of EOD. Since a new xpack just dropped the 200-300k ballpark for daily unique players seems realisic.

Server status depends on how many people are active in WvW. IIRC the world statuses are set every Monday. If a server is full, you have two options: wait till Monday to see if its status changes, or join a linked server.
As far as I'm aware there are not "traditional" quests. Things are happening in the world and you can participate. As such there is no need for "sharing quests" because anyone participating is a part of it. You're right that it does remove the need for grouping in many instances but you can still group up.
There is only ever place for 1 full squad. During the glory days of Istan for example you sometimes had a second one that had around 15 to 20ish players because the first was full. Nobody else would fit on the map and the ones not in a squad you could count on one hand.
ESO is basically Oblivion but online. Nothing new has been added to the Elder Scrolls franchise in awhile (except online). The combat system seems clunky and I didn't like it, at all. Graphically ESO looks better but gameplay and replay value wise I'd say GW2. I could only play 4 hours of this wretched game. Guild Wars 2 is also free to play.
Playing GW2 on two monitors. Pretty much I have two monitors. One of them is used to Skype/internet/whatever (secondary) and the Primary is used for GW2. However I want to use the secondary monitor for GW2 in fullscreen. I drag it over in Window mode and whenever I select fullscreen it goes fullscreen except in the primary monitor. Tl;dr Can't
